I use a process called HDR with stands for High Dynamic Range. A camera can only process a small dynamic range in comparison to what your eye/brain processes when it sees something. This technique involves actually taking 3 pictures at different exposures (very quickly) and combining them back together (with software, I use Photomatix) to give a higher dynamic range. Also a process call tonal mapping is done to improve the vividness of the image. This process creates an image closer to what you perceived as you were taking the picture.
